Compression wall OBJECT OF THE INVENTION
The purpose of this application is to register a compression wall that incorporates notable innovations.
More specifically, the invention proposes the development of a compression wall that can be linked to a mold for the formation of food products that allows an optimized use and management of the shaped food product.
BACKGROUND OF THE INVENTION
Solutions for forming food products, such as molding systems for cured meat products, such as ham and the like, are known in the state of the art.
In these systems such as the Spanish patent ES 2323212, a mold device with an oblong tubular body with two openings at both ends is disclosed. The food product to be molded is introduced through one of the openings, the other is closed. Once the food product has been introduced, a compression wall capable of sliding inside the tubular body is positioned. Anti-return means are provided between the compression wall and the inner face of the tubular body, specifically the compression wall has elastically requested ratchets and positioned on opposite sides of the lid. The mold comprises a series of grooves arranged as saw teeth complementary to the ratchets. The ratchets are moved by seats perpendicular to the inner faces of the tubular body, and these ratchets are linked to springs that force the ratchets to protrude through the edges of the compression wall. As the compression wall advances along the inside of the tubular body, the ratchets are compressing the spring and when engaged in a groove, the elastic force of the spring pushes the ratchet against the groove valley until the compression wall it reaches the position of maximum compression preset against the food product.

Another system is known by the Spanish patent ES 2366523 where the fundamental operation is repeated. In this document the difference fundamentally refers to the differentiated configuration of the anti-return means, with tilting ratchets.
In the known examples of the state of the art, a flat configuration compression wall is used to contact the food product. Once the product has been extracted from its location in the mold, it is sliced. To do this, it is placed in the appropriate tool and begins to cut from one end while the product is attached or fixed to the slicer by the other end. There comes a time when it is impossible to continue cutting due to the proximity of the cutting blade to the product fixing system, which is why an important portion of the product is impossible to slice. This portion means an important decrease in the whole process of production and packaging of food products.
Also in the known systems food products do not have an optimal way to hold them during handling.
DESCRIPTION OF THE INVENTION
The present invention has been developed in order to provide a compression wall that solves the aforementioned drawbacks, also providing additional advantages that will be apparent from the description that follows.
It should be noted that in the present application food product means any product that can be edible for people or animals and that can be shaped with a mold or similar.
A first object of the present application is a compression wall for forming food products by molding, which can be lodged transversely with respect to the mold body and slidably along the inside of an elongated and hollow mold body, comprising an elongated and prismatic configuration base body, so that at least one pair of opposite faces are defined, and joined together through a plurality of side faces, in which one of the front faces

It comprises a contact portion that can be linked to the food product in a condition of use, the contact portion having at least one region with a lowered or raised cross-section.
Thanks to these characteristics, a compression wall capable of being linked to a mold body is achieved, which, unlike the examples of the state of the art, allows reducing the losses in the food product during slicing. A performance improvement is achieved that is achieved with the configuration of the contact portion, the food product is used to a greater extent.
In addition, the configuration that is achieved in the food product conformed with said contact portion optimizes its fastening during slicing. In the food product, a projection or an inlet complementary to the recessed or raised cross-section is configured whereby the food product can be fixed to the slicing machine. The lowered or embossed cross section should be understood in relation to the contact portion.
In an alternative of the present invention the contact portion is formed in solidarity with the rest of the base body. In this way a wall of compact compression and simple construction is achieved.
According to a feature of the present invention, the base body comprises at least one ratchet on one of its lateral faces, in which the ratchet is slidably arranged in a housing, the ratchet being capable of fitting at least one complementary depression arranged on an inner face of a mold body in a blocking condition, the contact portion being linked to the rest of the base body in a sliding manner and in which they live in a direction along the mold body, the portion comprising of contact a releasable protrusion in a corresponding opening of the base body, the opening being communicated with the ratchet housing, the protuberance comprising an end capable of compressively bonding with a ratchet surface in a blocking condition, of so that in a blocking condition the position of the ratchet relative to the rest of the body of ba is fixed be. In this way, the compression wall with respect to the mold body can be blocked easily, without the use of springs or complex manufacturing elements.

A blocking condition should be understood as one in which the ratchets of the compression wall are introduced into the recesses of the mold body, so that the relative displacement between the compression wall and the mold body is avoided.
Said region may be arranged at least partially along the contact portion. Thus, the food product can be shaped to a greater extent, which facilitates its handling, and the relief achieved in the food product can be flexibly adapted.
For reasons of food safety, the base body and the contact portion are advantageously made of a food use material.
To provide greater flexibility in the development of fastening devices in slicers, the contact portion may comprise at least one region with a lowered cross section and another in relief.

As shown in the accompanying figures, a preferred but not exclusive embodiment of a compression wall according to the present invention and generally designated with the reference numeral 1 is illustrated.
In Figure 1 a first embodiment of the present invention can be seen, which comprises a base body 3 of elongated and prismatic configuration, so that a pair of front faces 31, 32 opposite each other are defined, and joined together through of a plurality of lateral faces 34, in this case four. One of the front faces 31, 32 comprises a contact portion 35 capable of being linked to a food product (not illustrated) in a condition of use. In this first embodiment, the contact portion 35 is integral with the base body 3.
In this embodiment, the food product is pork ham, however it could be any food product with at least partial meat, cheese, fish, etc.
Continuing with Figure 1, it is shown that the contact portion 35 has a region 36 with a lowered cross section. In the illustrated examples, said region 36 is arranged along the contact portion 35, although it will be evident that the region 36 may only be partially arranged along the contact portion 35. The positioning of the region 36 may also vary. , although preferably it will be arranged in the middle part of the contact portion 35, as shown in Figure 1. The number of regions 36 may vary for a contact portion 35, depending on the needs to set the food product to The slicing machine. The lowered cross section could take any particular shape for each case, so in the present description and figures, the cross section is substantially a trapezoid, although other shapes are possible, such as triangular, square, round, etc. This trapezoidal shape makes it possible to achieve a projection (not shown) in the food product that optimizes the support during slicing, and also allows reducing product losses, especially in the area where it is held to slice the rest. The extended base of the trapezoid projection increases its resistance to handling.

Another option not illustrated, comprises a contact portion 35 with at least one region 36 in relief and another recessed. This combination allows for optimal design freedom, especially for devising specific slicing devices that improve the fastening of the food product.
Advantageously, the base body 3, and the contact portion 31 are made of a food use material, thus improving food safety.
A second embodiment of compression wall 1 is illustrated in Figures 2-4, in which the contact portion 35 is not integral with the base body 3. This embodiment has the advantage that the contact portion 35 can be changed depending on in the way you want to adopt or in case of breakage or wear.
In any of the two embodiments defined in the present invention, it is a compression wall 1 for forming food products by molding, which can be lodged transversely with respect to the length of the mold body 2 and slidably along the inside of an elongated and hollow mold body 2. An illustration of an application of the present invention linked to a mold body 2 appears in Figure 4.
In the embodiment in which the contact portion 35 is not formed jointly with the rest of the base body 3, the contact portion 35 can be used as a means of actuation of ratchets 4 or the like to prevent the return of the wall of compression 1 when it is desired to block its position with respect to the mold body 2. In figure 3 an exploded view can be seen in which the contact portion 35 acts in this way. The base body 3 comprises a pair of ratchets 4 on two of their side faces 34 opposite each other, and oriented towards the complementary depressions or recesses of the mold body 21, each ratchet 4 is capable of engaging in a complementary depression 21 arranged in an inner face 23 of a mold body 2 in a blocking condition. The inner face 23 comprises a plurality of depressions 21 arranged in the longitudinal direction of the mold body 2 by way of saw teeth. The ratchet 4 is slidably housed in its corresponding housing 5.

The contact portion 35 is linked to the rest of the base body 3 in a sliding manner and in one direction along the mold body 2, the contact portion 35 comprising a pair of protrusions 39 releasably fit in openings 38 corresponding to the base body 3, the openings 38 being communicated with each housing 5 of the ratchet 4. The protuberance 39 comprises an end 37 capable of compressively bonding with a surface of the ratchet 4 in a blocking condition, so that in a blocking condition is fixed the position of the ratchet 4 relative to the rest of the base body 3.
Although in figure 3 a mold body 2 introduced in a countermold body 6 has been shown, it is to be understood that the present compression wall 1, either with the contact portion 35 integral or not with the rest of the base body 3, may be linked to any compatible or similar mold available in the market.
In a condition of use, the user will introduce the food product into the mold body 2. Next he will introduce the present compression wall 1 and slide in the direction of the food product until it reaches a point where the closed end of the body of tubular configuration countermold 6, prevents the advance of the compression wall assembly 1 and food product. Then the position of the compression wall 1 with respect to the mold body 2 is blocked, whatever the system for operating the ratchets 4 and engaging them in the depressions 21.
In the exemplary case before, in which the contact portion 35 is not integral to the rest of the base body 3, the contact portion 35 presses through its protuberances 39 a surface of the ratchet 4 which thus protrudes from the body of base 3, gearing on the mold body 2. In other cases such as those detailed in the background section, each system has different mechanisms to block the compression wall 1 with respect to the mold body 2.
During the connection of the contact portion 35 (and therefore of the region 36) on the food product, depending on whether the cross-section is recessed or raised, a projection or a complementary recess will be formed on said food product respectively.
The details, shapes, dimensions and other accessory elements, as well as the materials used in the manufacture of the compression wall of the invention may be conveniently substituted by others that do not depart from the scope defined by the claims included below. .

1. Compression wall (1) for the conformation of food products by molding, capable of being lodged transversely with respect to the length of the mold body (2) and slidably along the inside of an elongated mold body (2) and hollow, characterized by the fact that it comprises a base body (3) of elongated and prismatic configuration, so that at least one pair of front faces (31, 32) opposite each other are defined, and joined together through of a plurality of side faces (34), in which one of the front faces (31, 32) comprises a contact portion (35) capable of being linked to the food product in a condition of use, presenting the contact portion (35 ) at least one region (36) with a recessed or raised cross section.
